Numerals are easy enough - Google GameSalad custom font / score.
Non-numeric text is going to be more of a challenge (unless you pre-render the words you need), not least because there is no way of kerning within GameSalad, so the words are going to look a bit l ik et hi s.
Monospaced fonts and numerals should work quite well though.

Hmm, it's a Mac Creator file and not that easy to explain here. You might check out GS Helper's tutorials related to opening a Mac file in Windows. I'm on my phone or I'd find the links for you.
