iPhone 6 and 6+

I was in the middle of creating a game when the iPhone 6 and 6+ came out, I was building in the iPhone 5 screen size. Since the 5, 6, and 6+ all have an aspect ratio of 16:9, what will happen to image quality and and such?

very good question. But i beleive the answer is yes. If the aspect ratios are the same then you should be good.
I would create my art for the largest screen size and not the smallest. that way the art is crisp on the 6+
As @FINNBOGG mentions -- it will work fine in terms of screen real-estate.
Create your art at higher resolutions and you should be safe. I generally create art at @4x iPhone 5 size, e.g. 4x the size of the actor in question. That is a bit larger than absolutely necessary, but all the iOS 8 devices out there will have no memory problems managing that art, and it will mean that you will have large-enough assets even for an iPad version (if it is in the works or becomes an option), or future versions of iPhone, once the resolution goes up again.
