I generally don't use GameSalad to make the traditional "game" but I do enjoy making apps that parents and kids can use and enjoy together. Here's my latest entry:
The Counting Box for young children who are interested in numbers. It's based on an article I saw on boingboing last year that detailed a wooden counting box with electronic numbers made by a father for his son.
I don't have the mechanical skills (or patience) to complete such a beautiful project in real life, but I'm pretty good with photo editing and I have GameSalad, so I made a little counting box of my own for my iPhone. My son enjoyed playing with it, so I brushed up the graphics and the functionality and just published it in iTunes!
