Ad Hoc build is the best bet. GS viewer seems to have better performance than an actual build in my experience.

use the GS Viewer for testing in initial stages... layout... graphics... interaction and the information about the affect your game has on computer usage... fps.. memory...etc.

when you think you have a good working application... do an Ad Hoc build and run through to actually see its performance on the devices...

Along with what motherhoose said you need to test on as many different model devices as well the game will actually perform differently on ech type and gen of device. I normally test on 3g Iphone4 and 4th Gen touch. I would love to have a 3Gs I could use as well but unfortunately I don't. I send a build to friend that does though.

Hey tenrdrmer, I was looking on eBay and found a lot of used iPhone 3GSs for one penny with free shipping. I am thinking about getting one to test my apps on. Just thought you'd like to know.

Haha, actually another member of my team has a 3G that we use for testing already. I was kinda surprised when I found that out about the low cost of a 3GS on eBay myself, considering AT&T is selling the 3GS for $49.99 or something like that. But the key word on that eBay page is USED 3GS :)
