why I need to keyin so many information in the publish process ?
(description,copyright,game category,and screenshots)

I'v publish apps in Apple Store,we know that most informations keyin in the iTunes Connect,not xcode.

why GS need these informations ?

I believe it's so that, at some point in the future, there'll be a game page on GS for every game you publish, in case you don't have your own web-page.

It's superfluous for sure, and I'm not a fan. I just fill it with rubbish (so apologies if my game pages in future don't make sense!).
